Ingredients:

  • 1 dark chocolate cake mix (or your own from scratch)
  • 1/4 c. kirsch (cherry brandy)
  • 1 can cherry pie filling
  • 16 oz. heavy whipping cream
  • 1/2 c. confectioners’ sugar
  • Maraschino cherries, drained, optional, for garnish
  • milk chocolate curls or shavings, for garnish

Preparation:

Drain cherry pie filling in a colander to remove most of the thickened juices.

Make cake, following package directions. Bake cake, as directed, in two 9-inch layer cake pans.

When cool, sprinkle kirsch over both cake layers.

Chill electric beaters and large mixing bowl; beat cream until it thickens slightly, gradually add confectioners’ sugar and beat until thick enough to hold its shape.

Using a vegetable peeler, shave chocolate; refrigerate until ready to serve.

Assemble cake; place one layer on serving plate and spread its top with 1/2-inch thick layer of whipped cream and strew the cherries over the cream leaving about 1/2 inch margin around border of cake with no cherries.

Set other layer on top of cherries and spread top and sides of cake with remaining cream, shape whipped cream into decorative swirls on top.

With fingers, gently press chocolate curls into cream on sides of cake.

Garnish top with drained maraschino cherries, if desired, or with a few remaining chocolate curls.

Vegetarian Gumbo

Vegetarian Gumbo
1 tbsp. extra virgin olive oil1 large sweet potato, diced (I leave the skin on)
1 green bell pepper, diced1 yellow onion, diced2 garlic cloves, mincedSalt and pepper
2 tbsp. flour1 c. beer 1 28 oz. can crushed tomatoes
2 tsp. hot sauce1 tsp. gumbo file seasoning (which is ground sassafras leaves)
1 tsp. smoked paprika2 c. frozen okraSour cream, for garnish (optional)Prepared brown rice
Heat a dutch oven over medium heat. Add olive oil, sweet potato, pepper, onion and garlic. Season with salt and pepper, sauté for 5 minutes. Sprinkle in flour and stir to coat. Cook for 2 more minutes, turn to high and add beer. Allow alcohol to cook off, turn to low add tomatoes, hot sauce, and seasoning. Stir to combine, cover and simmer for an hour. Add okra, stir to combine, bring back to a simmer. Serve over brown rice.Top with sour cream.

No Baked Cheesecake

Ingredients:
1 1/2 cups semisweet chocolate chips
11 ounces softened cream cheese
1/2 cup granulated sugar
1/4 cup softened butter or margarine
2 cups frozen whipped topping, thawed
1 graham cracker crust (recipe below)
More whipped topping or whipped cream for topping
Chocolate shavings, optional


Directions:
1. Melt chocolate chips in a saucepan over low heat, stirring constantly, until smooth.

2. Beat cream cheese, sugar and butter until smooth. Beat in melted chocolate on low speed. Gently fold in whipped topping until fully combined.

3. Spoon cream cheese mixture into prepared crust. Cover and chill until firm. Top with whipped topping and chocolate shavings.



Graham Cracker Crust

Ingredients:
1 1/2 cups graham cracker crumbs
1/3 cup packed brown sugar
1/2 teaspoon ground cinnamon
1/3 cup butter or margarine, melted

Directions:
Combine graham cracker crumbs, brown sugar and cinnamon. Mix in melted butter. Press mixture into the bottom of a springform pan. Chill until ready to use.

I love yellow cab’s charlie chan.. Ever wonder how they cook it. I have tried one recipe that really capture the taste of Charlie Chan. Now you can cook it right from your kitchen! You can see recipes sa internet pero may kulang eh. So I revised the recipe. Eto na yun…

Ingredients:
Spaghetti or Angel Hair Pasta (500g)
1 small bottle of Oyster sauce (for Vegetarians/ Adventist you may use Lea Perrins’ worcestershire sauce and mix it with cornstarch and brown sugar to make it thick and sweet)
2 gloves Garlic (peeled, cut but not mince)
1 White Onion (cut in large parts)
1 Red Bell pepper and red Chilli pepper (optional)
Garlic powder
Shitake Mushrooms (pag wala pwede na yung Straw Mushrooms) cut and steamed
Chicken Strips much better kung chicken tocino kung wala i marinate sa BBq sauce and chicken breast for 30 minutes. If your an Adventist or vegetarian you may use vege tocino.
Roasted Peanuts
Olive Oil
Butter
Semame oil
Brown Sugar
Salt and Pepper to taste

Directions:
1. Saute Garlic in Olive oil until brown, add onion until it caramelized.
2. Add enough butter( make sure lang na hindi lumalangoy sa oil and garlic and onion)
3. Add Chicken Strips followed by Shitake Mushrooms and other vegetables in the Ingredients.
4. Add oyster sauce, Sesame Oil and brown Sugar
5. Add pasta then Salt and pepper and peanuts
6. Add the remaining ingredients according to your taste.
